1 chicken -- * see note
2 avocadoes -- peel/slice
1/2 cup chicken stock
1/2 cup cream -- thick
2 oz butter
1 small onion
2 tsp fresh grated ginger
1/2 lb bacon -- * see note
1 salt
1 freshly ground black pepper
Directions
This Bristish dish is such an unusual combination but everybody raves
about it and is always trying to find out the recipe.
* bacon to be grilled until crispy and finely chopped. * use cooked
chicken-enough for 6 portions.
Set oven at 400 degrees. Peel and slice the onions very finely and
saute with the spices in the butter until transparent. Leave to one
side. Meanwhile, liquidize the avocados, stock and cream in a
blender. Mix in the onions and pour the mixture over the chicken in
an ovenproof dish. Sprinkle over the bacon and heat through for 20

The History of Recipes
Experts have tracked the existance of recipes way back into antiquity, in truth as far back into history as pharonic Egypt, and maybe further still. Interesting though that maybe, mostly, these ancient recipes were just simple pictorial instructions for preparing meals.
Interestingly, the most ancient recipe discovered, according to experts are a few clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Closer to modern times, there were two interesting recipe books published in the 14th Century ; a recipe book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, these two books are not about the spicy food that we all know today, but rather accounts of the types of meals cooked for the nobility of the period. In the fifteenth century, people returning from the crusades brought us many new foods and spices from the holy land, including basil and coriander. The introduction of these new herbs and spices created a torrent in books on cooking, most of which are now in private cookery archives. During the succeeding few hundred years, the rich and powerful families of Wesstern Europe tried to serve up the most extravagent banquests, and consequentially the best cooks and their recipe collections became highly prized. Even so, it was during the nineteenth century the formal cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, trying out, and recording the recipes that were being prepared for the better households. Like it or not, the introduction of television brings us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like those on sites such as the one you are reading now. |
