The History of Recipes
It is quite feasible to track the history of written cooking instructions back into antiquity, in fact as far back as the Egypt of the Pharoahs, and maybe further still. However, mostly, these old cook books were just simple hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe found, according to historians is a series of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into Roman times around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main course and desserts, a style of dining still practiced today. He also describes how the chefs of Roman times made use of many spices, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. Moving on, there are some interesting books published in the 14th Century : one book called `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these are not about the indian curry that is popular today, but instead descriptions of the types of food served to the rich and powerful of that time. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from the East, including basil and rosemary. These new herbs and spices prompted an increase in books on cookery, many of which are now in academic collections. Like it or not, the introduction of TV brought us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on this web site. |
