The History of Recipes
It is quite feasible to trace the history of recipes back into the far past, in fact as far into history as early Egypt, and maybe further still. Interesting though that is, generally, these ancient cookbooks were just very simple pictorial instructions for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a series of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius created a few scripts which described recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into appetizers, entrees and desserts, something we still use today. Aspicius tells us how the Roman chefs were skilled in the use of many different herbs and spices, including some familiar names for example basil, fennel and parsley. In the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including spices like basil and rosemary. The introduction of these new tastes led to a surge in books on cookery, many of which are now in private collections. Over the next few centuries, the families of Europe tried to lay on the most extravagent meals, and consequentially the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, verifying, and writing down the recipes of their peers. By the arrival of the twentieth century, cookbooks were increasing in popularity mostly as a result of better eduction, people having increased leisure time and a general increase in wealth. |
