The History of Recipes
Historians have traced the existence of recipes back into distant history, at least as far back into recorded history as the ancient Egyptians, and potentially, even further back. Having said that, generally, these early recipes were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered, according to experts in ancient history is a collection of stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. Progressing into The time of the romans 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes prepared by his fellow Romans. In his works, Apicius recounts how the roman meals were divided into appetizers, entrees and afters, a style of dining still practiced today. Additionally, he tells us how the ancient chefs made use of a wide range of aromatic flavours, including many that are still in use today like bay, mint and asafoetida. Over the next few centuries, the wealthy families of Europe competed with each other to serve up the most exotic banquets, and consequentially the best chefs and their recipes increased in prestige. Nevertheless, it was during the 1800s that cooking and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them. The introduction of television brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to search through massive numbers of recipes just like those on our site. |
