The History of Recipes
Academics have traced the existance of recipes way back into the distant past, in fact as far back into recorded history as the ancient Egyptians, and potentially, even further back. However, sadly, these ancient cookbooks were just primitive pictorial recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. During Roman times around 25BC a man called Apicius assembled a few documents showing how to cook the recipes prepared by the Romans. In his publication, Apicius tells us how the meals were divided into starters, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the cooks of his times made use of many different aromatic flavours, including many that are still in use today like bay, rue and parsley. As our culinary historical trip moves on a few more years there are a couple of books dating from the fourteenth century - a recipe book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, they are nothing to do with the spicy food that is served today, but rather recipes for the types of food on the tables of the rich and powerful of the period. Later, in the 15th century, knights returning from the crusades brought us many new foods and spices from the East, including spices such as basil and rosemary. These new culinary innovations caused a surge in manuscripts on cooking, the majority of which are kept safe in academic collections. Like it or not, the introduction of TV brought us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes such as those found on the site you are now reading. |
