The History of Recipes
It is actually possible to trace the history of written recipes far back into the far past, at least as far into history as early Egypt, and possibly even further than that. However, generally, these old records were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
As we move into Roman times 25BC a roman called Apicius created a number of documents detailing recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the roman meals were split into starters, main course and afters, something that is very familiar to us today. This early Roman chef describes how the cooks of his times used many different spices, including some familiar names for example basil, fennel and dill. During the following few centuries, the families of Europe competed to offer the most extravagent meals, and as a consequence, cooks and their recipe collections were much in demand. Nevertheless, it was during the nineteenth century the formal cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collating, testing, and writing down recipes common in their social group. The revolution that is television gave us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like those on this web site. |
