The History of Recipes

Academics have traced the existance of recipes way back into history, certainly as far into history as the Egyptians, and quite possibly further than that. Interesting though that is, sadly, these early records were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.

In fact, the most ancient recipe discovered so far, according to experts are a few stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful.

Progressing into Roman times around 25BC a roman called Apicius compiled a number of documents which described recipes prepared by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvres, entrees and afters, a very modern way of dining. Aspicius also informs us how the ancient cooks made use of many different spices, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida.

Later on in the 1400s, people returning from the crusades brought us many new foods, spices and herbs from Arab cuisine, including spices like coriander, parsley, basil and rosemary. These new foods and tastes caused a surge in manuscripts on cooking, the majority of which still exist in academic collections.

For the centuries that followed, the rich and powerful families of Wesstern Europe tried to serve the best banquets, and because of this the best chefs and their collection of recipes became highly prized. However, it wasn`t until the 1800s that cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy.

By the advent of the twentieth century, cookery books were increasing in popularity due to higher levels of literacy, people having increased leisure time and disposable income.

The introduction of the TV brings us celebrity chefs and the spin-off recipe books.

Which pretty much brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes like those on this recipe site.
