The History of Recipes
Academics have traced the existence of recipes back into history, in fact as far as the Egyptians, and maybe further still. Interesting though that is, in the main part, these ancient cook books were just basic pictorial instructions for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. As we move into Roman times around 25BC a roman called Apicius compiled a collection of documents detailing recipes enjoyed by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the early Romans used many herbs and spices, including many that are still in use today like bay, fennel and dill. During the following few centuries, the upper-class families of the West competed to serve the best banquets, and as a consequence, the best chefs and their collection of recipes were highly sought after. However, it wasn`t until the 1800s that fine cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and recording recipes to help cooks of their time. By the advent of the 1900s, cookery publications were highly popular due to more people being able to read, people having increased leisure time and being a little richer. The revolution that is television brings us TV cooks and the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes like the ones you can find on our site. |
