2 1/2 lb chicken breasts,thighs and legs,ski, nned
14 1/2 oz can mexican style stewed tomatoes
8 oz can tomato sauce
7 oz can diced green chilies
1/2 tsp cumin
1 clove garlic, minced
2 zucchini, sliced
1 salt and black pepper
1 rice, if desired
Directions
Combine all ingredients except zucchini, salt and black pepper in a 4=
quart pot. Cover and simmer 45 minutes. Add zucchini and salt and
black pepper= to taste. Cover and simmer 15 minutes more. Serve with
rice, if desired.
Makes 4 to 6 servings.

The History of Recipes
Recipes as an idea can be traced way back into ancient history, in truth as far as pharonic Egypt, and maybe further still. In practice though, sadly, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe found, according to experts is a collection of tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. During the time of the Romans a man called Apicius created a collection of scripts which described recipes prepared by wealthy Romans. In his publication, he tells us how the meals were divided into hors d`oeuvres, main course and desserts, something that is very familiar to us today. Aspicius informs us how the ancient chefs made use of many different spices and herbs, including a few that will be familiar to modern cooks like bay, mint and asafoetida. Moving our culinary historical trip onwards, we have two interesting cookery books which were published in the 14th Century ; a recipe book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these books are unconnected to the indian curry that appears on menues today, but instead accounts of the types of food served to the rich and powerful of that time. Later on, in the 15th century, knights returning from the crusades brought us many new foods and spices from the East, including parsley and basil. The introduction of these new tastes caused a torrent in recipe books, some of which are kept safe in private cookery archives. When we get to the 20th century, recipe books were increasing in popularity as a result of increased literacy, people having more spare time and disposable income. |
