The History of Recipes

Food historians have proved the existance of recipes back into history, in truth as far back into history as ancient Egypt, and potentially, even further back. In practice though, in the main part, these old recipes were just very basic hieroglyphic instructions for preparing meals.

In an interesting twist, the oldest recipe discovered so far, according to experts is a series of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful.

Later on, in The time of the romans 25BC a roman called Apicius assembled a few documents describing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals were split into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including some familiar names for example bay, rue and parsley.

Continuing our culinary historical journey, there were a couple of interesting recipe books published in the fourteenth century : a recipe book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these two books are not about the spicy food that is served today, but rather accounts of the types of meals served to the wealthy.

Later on, in the 15th century, knights returning from the crusades brought back many foods and spices from Arab cuisine, including spices like parsley, basil and rosemary. The introduction of these new herbs and spices led to an increase in cookery books, the majority of which still exist in private cookery archives.

When we get to the 20th century, cookery publications were in high demand, as a result of higher levels of literacy, people having increased spare time and disposable income.

The TV revolution brings us cooking programs and the demand for the spin-off recipe books.

And that neatly brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on sites such as the one you are reading now.
