The History of Recipes
We can track the history of written recipes far back into the distant past, in truth as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, in the main part, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. During the time of the Roman Empire a man called Apicius created a number of documents showing how to cook the recipes prepared by his fellow Romans. In his publication, he tells us how the meals were divided into hors d`oeuvre, entrees and dessert, a very modern way of dining. Aspicius describes how the chefs of Roman times made use of many spices and herbs, including some that we all recognise for example basil, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought us many new spices and herbs from middle-east cuisine, including spices such as parsley and basil. The introduction of these new tastes prompted an outbreak in recipe publications, the majority of which still exist in academic collections. Over the following few hundred years, the rich families of Wesstern Europe strove to serve the most exotic banquets, and because of this chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and writing down recipes of the day. The introduction of television brings us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes like the ones you can find on this site. |
