The History of Recipes
Recipes as an idea can be found back into antiquity, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, these, ancient cookbooks were just basic hieroglyphic instructions for preparing food.
Later on, in The time of the romans 25BC a man called Apicius compiled a collection of documents which described recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were divided into appetizers, main course and dessert, something we still use today. Aspicius tells us how the early Romans used a wide range of aromatic flavors, including a few that will be familiar to modern chefs such as bay, fennel and dill. Over the succeeding few centuries, the powerful families of Europe tried to offer the most extravagent banquests, and as a result cooks and their collection of recipes were much in demand. Even so, it was during the nineteenth century that haute cuisine and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to assembling, trying out, and publishing recipes for their fellow cooks to enjoy. When we get to the 20th century, cooking books were starting to become popular as a result of increased literacy, people having more free time and having more disposable income. |
