The History of Recipes
Recipes as a concept can be tracked way back into antiquity, certainly as far into history as early Egypt, and possibly even further. In practice though, sadly, these early cookbooks were just simple pictorial instructions for preparing meals.
During Roman times 25BC a roman called Apicius compiled a collection of documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, a very modern way of dining. He also describes how the cooks of his times used a wide range of aromatic flavours, including some that we all recognise for example basil, rue and dill. During the succeeding few centuries, the upper-class families of the West tried to offer the most exotic banquets, and consequentially the best cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the nineteenth century that cookery and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and writing down recipes common in their social group. By the arrival of the 1900s, cookery publications were starting to become popular due to better eduction, people having more leisure time and having more money to spend. |
