The History of Recipes
Experts have traced the existance of recipes way back into ancient history, at least as far as the early Egyptians, and possibly even further. However, generally, these old cookbooks were just basic hieroglyphic instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to historians is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into Roman times 25BC a roman called Apicius compiled a collection of documents which described recipes cooked by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. He also informs us how the Roman cooks used a wide range of herbs, including a few that are still present in modern kitchens like thyme, rue and parsley. Later on, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the holy land, such as coriander, parsley, and basil. These new foods and spices created an outbreak in books on cooking, many of which are kept safe in academic collections. Over the succeeding few centuries, the upper-class families of the West tried to offer the best banquets, and consequentially cooks and their recipes were at a premium. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, verifying, and recording recipes to allow everyone to enjoy them. The TV revolution brings us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes just like those on the site you are now reading. |
