The History of Recipes
It is actually possible to trace the history of written recipes way back into antiquity, certainly as far into history as the ancient Egyptians, and possibly even further. In practice though, sadly, these early recipes were just basic pictorial recipes for food preparation.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. As we move into Roman times 25BC a roman called Apicius compiled a number of documents describing recipes cooked by his fellow Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. He also describes how the cooks of Roman times were skilled in the use of many aromatic flavors, including a few that will be familiar to modern chefs such as basil, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought us many spices and herbs from the holy lands, such as parsley, basil and rosemary. These new culinary innovations caused an eruption in manuscripts on food, some of which are now in private collections. During the following few centuries, the rich and powerful families of Wesstern Europe competed with each other to lay on the most exotic banquets, and consequentially cooks and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collating, testing, and writing down popular recipes of the day. The revolution that is television brings us cooking programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes like the ones you can find on this web site. |
