The History of Recipes
It is possible to read the history of written recipes way back into distant history, in truth as far into history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, mostly, these early cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to food historians are some tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius assembled a few documents which described recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals were split into starters, entrees and afters, a style of dining still practiced today. Aspicius also recounts how the ancient chefs were skilled in the use of many different aromatic flavours, including some that we all recognise such as bay, rue and asafoetida. For the decades that followed, the upper-class families of Wesstern Europe tried to serve up the most extravagent meals, and because of this the best chefs and their recipe collections were at a premium. Even so, it was during the 1800s the formal cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, trying out, and recording popular recipes of the day. By the time we get to the 1900s, cookery publications were starting to become popular mostly as a result of higher levels of literacy, people having increased leisure time and having more money to spend. |
