The History of Recipes

Transcribed cooking instructions as a concept can be traced back into the distant past, in fact as far back into history as the ancient Egyptians, and possibly even further. Interesting though that is, sadly, these early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.

In an interesting twist, the most ancient recipe in existence, according to food historians is a collection of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful.

Progressing into Roman times 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Additionally, he tells us how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens for example bay, mint and asafoetida.

Later on, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices such as parsley and basil. The introduction of these new herbs and spices caused an eruption in books on cooking, many of which are kept safe in academic collections.

Over the succeeding few hundred years, the powerful and wealthy strove to serve the best banquets, and as a consequence, chefs and their recipe collections could command a high salary. Even so, it wasn`t until the 19th century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to assembling, trying out, and recording recipes of the day.

The TV revolution gave us celebrity TV chefs and the spin-off recipe books.

Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access thousands of recipes just like those on sites such as the one you are reading now.
