Directions
Mash chickpeas with fork and add seasonings. Serve on toasted whole
wheat bread with lettuce and tomato slices.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions back into antiquity, at least as far into history as pharonic Egypt, and maybe even further. However, in the main part, these early cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to experts are some clay tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents detailing recipes cooked by his fellow Romans. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvres, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the chefs of Roman times were skilled in the use of many spices, including many that are still in use today for example thyme, fennel and dill. During the next few hundred years, the powerful families of Europe competed to offer the most extravagent meals, and as a result chefs and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century that cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and recording recipes of the day. Like it or not, the introduction of TV brought us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes like the ones you can find on this recipe site. |
