The History of Recipes
We can trace the history of meal recipes way back into distant history, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, sadly, these early records were just basic pictorial instructions for meal preparation.
In fact, the most ancient recipe discovered, according to experts are a few tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. Later on, in Roman times around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes prepared by his fellow Romans. In his works, he recounts how the meals were split into hors d`oeuvre, entrees and desserts, something we still use today. Aspicius also tells us how the cooks of Roman times used a wide range of spices and herbs, including a few you will know for example basil, fennel and asafoetida. As our culinary historical trip moves to more modern times we find some recipe books which appeared in the fourteenth century - a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these books are unconnected to the curry that is popular today, but instead accounts of the types of meals prepared by the cooks of the rich people of the time. In the 15th century, people returning from the crusades brought back many foods and herbs from Arab cuisine, including spices like coriander, parsley, and basil. The introduction of these new herbs and spices caused a torrent in manuscripts on cooking, many of which are now in private cookery archives. By the arrival of the twentieth century, cook books were in great demand, mostly as a result of higher levels of literacy, people having increased spare time and disposable income. The introduction of television gave us TV cookery programs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on this site. |
