The History of Recipes
Transcribed cooking instructions as a concept can be tracked way back into antiquity, in fact as far into history as ancient Egypt, and possibly even further than that. Interesting though that is, in the main part, these ancient records were just basic hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered so far, according to historians is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in The time of the romans 25BC a roman called Apicius compiled a few scripts showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were divided into starters, main meal and desserts, something we still use today. Additionally, he informs us how the ancient Romans made use of a good variety of spices, including a few that will be familiar to modern cooks such as thyme, mint and asafoetida. Over the succeeding few centuries, the rich and powerful families of Wesstern Europe strove to serve up the most exotic meals, and because of this cooks and their recipe collections were much in demand. However, it was during the 19th century the formal cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing popular recipes of the day. When we get to the 20th century, cookery books were greatly in demand mostly due to higher levels of literacy, people having more free time and having more money. The TV revolution brings us TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on this web site. |
