1 lb longhorn cheese
1 tabasco sauce to taste
1/2 cup chopped pecans
8 oz cream cheese
1 cup chopped green chile
Directions
Put cheese in large bowl and mix until smooth. Add the rest of the
ingredients. Shape into balls and roll in chopped pecans. Wrap in wax
paper and refrigerate.

Aspicius describes how the Roman chefs were skilled in the use of a wide range of spices, including a few that will be familiar to modern cooks like thyme, rue and parsley. Over the next few centuries, the upper-class families of the West strove to offer the best banquets, and as a result the best cooks and their recipes were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, testing, and publishing recipes to help cooks of their time. By the arrival of the twentieth century, cookery publications are greatly in demand due to increased literacy, people having increased free time and being a little richer. |
