The History of Recipes
It is possible to trace the history of written recipes way back into the far past, in fact as far as the early Egyptians, and maybe further still. Interesting though that is, generally, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts in ancient history are a few stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the chefs of Roman times were skilled in the use of many different aromatic flavors, including a few that will be familiar to modern chefs such as basil, fennel and dill. As we move on, we have a couple of books dating from the 14th Century : a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these have no connection with the indian curry that is served today, but rather accounts of the types of meals enjoyed by the upper classes of that period. Later, in the fifteenth century, knights returning from the crusades brought back many new spices and herbs from the holy lands, including basil and rosemary. The introduction of these new culinary ideas prompted an outbreak in recipe books, the majority of which are now in private cookery archives. By the time we get to the 1900s, cooking books are starting to become popular mostly due to better eduction, people having more leisure time and a general increase in wealth. |
