The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions far back into ancient history, at least as far back into recorded history as ancient Egypt, and maybe further still. In practice though, sadly, these ancient cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered, according to food historians are a few clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Progressing into The time of the romans around 25BC a roman called Apicius compiled some scripts describing recipes prepared by his fellow Romans. In his publication, Apicius describes how the roman meals were separated into starters, entrees and dessert, something we still use today. He also tells us how the Romans were skilled in the use of many aromatic flavors, including a few that will be familiar to modern cooks such as thyme, mint and asafoetida. During the next few hundred years, the rich and powerful families of the West competed with each other to serve up the most exotic meals, and consequentially the best cooks and their recipe collections could command a high salary. Notwithstanding that, it was during the 1800s that haute cuisine and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, trying out, and publishing popular recipes of the day. By the advent of the 1900s, cookery books were in great demand, mostly due to better eduction, people having more leisure time and having more money to spend. |
