The History of Recipes
Written recipes as an idea can be traced far back into the far past, in truth as far back as ancient Egypt, and potentially, even further back. In practice though, in the main part, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the romans 25BC a roman called Apicius created a number of documents which described recipes cooked by his fellow Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, entrees and desserts, a very modern way of dining. Aspicius describes how the cooks of Roman times were skilled in the use of many different spices and herbs, including a few you will know for example thyme, fennel and parsley. Later on, in the 15th century, people returning from the crusades brought back many new spices and herbs from Arab cooking, including spices like basil and coriander. The introduction of these new tastes led to an outbreak in books on cooking, most of which are kept safe in academic collections. The TV revolution gave us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes like those on this site. |
