The History of Recipes
Written recipes as a concept can be observed far back into the distant past, at least as far as early Egypt, and possibly even further. However, in the main part, these old cook books were just primitive hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics are a few clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Much later, in Roman times a roman called Apicius created a few documents describing recipes enjoyed by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the chefs of Roman times were skilled in the use of a good variety of herbs, including some familiar names for example thyme, mint and parsley. Over the succeeding few hundred years, the upper classes competed with each other to serve the most exotic meals, and because of this chefs and their recipes were much in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and cookery books became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and writing down the recipes of their peers. When we get to the twentieth century, cookbooks were in high demand, mostly as a result of higher levels of literacy, increased leisure time and having more disposable income. The TV revolution gave us cooking programs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on this web site. |
