The History of Recipes
Food historians have tracked the existance of recipes way back into antiquity, at least as far back as the Egypt of the Pharoahs, and maybe even further. However, mostly, these ancient recipes were just simple hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe found, according to experts in ancient history are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius created some scripts detailing recipes enjoyed by the Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvre, main meal and dessert, something we still use today. This early Roman chef informs us how the Roman chefs used a good variety of aromatic flavours, including a few that are still present in modern kitchens like bay, rue and parsley. Over the succeeding few centuries, the powerful and rich competed to serve up the most exotic meals, and as a result chefs and their collection of recipes increased in prestige. Even so, it wasn`t until the 19th century that fine cookery and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and recording recipes to allow everyone to enjoy them. When we get to the twentieth century, cookbooks are highly popular mostly due to increased literacy, more spare time and a general increase in wealth. |
