12 oz cottage cheese, low fat creamy
2 can kidney beans, drained (about 1 lb each)
1 package chili seasoning mix or to taste
1 dippers: raw vegetables or tortilla, chips
Directions
Process cottage cheese, beans and seasoning mix in blender or
food processor until fairly smooth. Serve with dippers.

The History of Recipes
We are able to read the history of written recipes back into distant history, certainly as far into history as the early Egyptians, and possibly even further than that. Having said that, in the main part, these ancient records were just very simple hieroglyphic recipes for meal preparation.
As we move into Roman times around 25BC a roman called Apicius compiled a collection of documents detailing recipes prepared by his fellow Romans. He recounts how the meals were split into appetizers, main course and desserts, a style of dining still practiced today. Aspicius tells us how the early Romans used a good variety of aromatic flavors, including some familiar names like thyme, mint and asafoetida. During the following few centuries, the upper-class families of the West competed to serve the most exotic banquets, and consequentially cooks and their recipes increased in prestige. Even so, it was during the nineteenth century that fine cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, trying out, and writing down recipes that were common in the better off homes of the day. Like it or not, the introduction of TV brings us TV cooks and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes such as those found on sites such as this. |
