The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions way back into distant history, in truth as far back as the Egyptians, and maybe even further. Interesting though that is, sadly, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to food historians is a series of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a number of documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals were separated into appetizers, main course and dessert, something we still use today. This early Roman chef describes how the early Romans made use of many herbs, including many that are still in use today like basil, rue and dill. Later on in the 1400s, knights returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, including spices such as basil and rosemary. These new foods and tastes led to a torrent in recipe manuscripts, most of which still exist in academic collections. For the centuries that followed, the upper-class families of the West tried to offer the best banquets, and because of this chefs and their collection of recipes could command a high salary. However, it was during the nineteenth century that fine cookery and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, verifying, and recording recipes to allow everyone to enjoy them. The introduction of the TV brings us celebrity TV chefs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on the site you are now reading. |
