The History of Recipes
It is actually possible to trace the history of recipes back into history, in fact as far into history as the early Egyptians, and maybe further still. However, sadly, these old cookbooks were just primitive hieroglyphic recipes for preparing meals.
Interestingly, the most ancient recipe found, according to historians is a series of ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Later on, in Roman times 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, main course and afters, something we still use today. This early Roman chef tells us how the Roman chefs used many aromatic flavors, including some familiar names such as thyme, rue and asafoetida. In the fifteenth century, people returning from the crusades brought back many new spices and herbs from the East, including coriander, parsley, and basil. These new herbs and spices caused a torrent in cookery books, most of which still exist in private libraries. During the succeeding few centuries, the powerful and wealthy strove to lay on the most exotic meals, and as a result the best cooks and their recipes were greatly in demand. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collating, trying out, and writing down the recipes that were being prepared for the better households. By the arrival of the 1900s, cook books were starting to become popular mostly due to increased literacy, people having more leisure time and having more money. |
