The History of Recipes
It is possible to trace the history of meal recipes back into the far past, at least as far into history as the early Egyptians, and maybe even further. Interesting though that is, generally, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe found, according to food historians is a series of tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius created a number of scripts detailing recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of his times were skilled in the use of many different aromatic flavours, including some familiar names such as thyme, mint and dill. Later, we have some recipe books dating from the 1300s ; a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these books have no connection with the indian food that is served today, but instead descriptions of the types of food on the menus of the rich and powerful of that period. Later, in the fifteenth century, knights returning from the crusades brought us many spices and herbs from the Middle-East, including spices such as parsley and basil. The introduction of these new culinary ideas caused an outbreak in recipe publications, the majority of which are now in academic collections. During the following few hundred years, the rich families of the West competed to offer the most exotic banquets, and as a result chefs and their recipe collections could command a high salary. However, it wasn`t until the 1800s that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, trying out, and writing down popular recipes of the day. By the time we get to the 1900s, cooking publications were in great demand, mostly due to increased literacy, leisure time and having more money to spend. The arrival of television brings us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on our site. |
