The History of Recipes
We can trace the history of meal recipes back into antiquity, at least as far into history as the early Egyptians, and maybe further still. However, in the main part, these old cookbooks were just basic hieroglyphic instructions for preparing meals.
In fact, the oldest recipe in existence, according to experts is a collection of stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled a collection of scripts detailing recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals were split into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of Roman times used a good variety of spices, including a few that will be familiar to modern cooks such as basil, mint and dill. Later on, there are two recipe books from the 14th Century - a recipe book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these are unconnected to the indian food that is served today, but rather accounts of the types of food prepared by the cooks of the rich and powerful of the period. Later on in the 1400s, the Crusaders brought back many foods, spices and herbs from Arab countries, including coriander, basil and rosemary. These new herbs and spices caused a torrent in publications on food, the majority of which are now in private cookery archives. For the next few years, the wealthy families of the West competed to offer the best banquets, and as a consequence, the best cooks and their recipes became highly prized. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, testing, and publishing popular recipes of the day. By the advent of the twentieth century, cooking books were in great demand, due to more people being able to read, people having more leisure time and disposable income. The introduction of the TV brought us TV cookery programs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on this web site. |
