The History of Recipes
It is possible to follow the history of written recipes far back into the distant past, at least as far back as early Egypt, and quite possibly further than that. Having said that, generally, these early records were just very basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to academics are a few ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Progressing into The time of the romans 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by the Romans. In his works, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. Additionally, he tells us how the Roman chefs were skilled in the use of many spices and herbs, including a few that will be familiar to modern cooks like bay, rue and asafoetida. Over the next few centuries, the powerful and wealthy strove to lay on the best banquets, and because of this the best chefs and their recipes were much in demand. However, it wasn`t until the nineteenth century that formal cookery and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, testing, and publishing recipes to help cooks of their time. By the arrival of the twentieth century, cook books were starting to become popular due to higher levels of literacy, people having increased leisure time and having more disposable income. |
