5 eggs
1/4 cup all purpose flour
1/2 tsp baking powder
1 cup cottage cheese
2 cup shredded monterey jack cheese (8oz)
1/4 cup butter or margarine, melted

Directions
In a large mixing bowl, beat eggs well. Stir in next five
ingredients. Add green chilies. Pour into a greased 8 inch square
baking pan. Bake at 350 F for 40-45 minutes or until a knife inserted
near the center comes out clean. Serve immediately. Makes 6-8
servings.

The History of Recipes
We are able to read the history of meal recipes back into ancient history, at least as far back into history as the ancient Egyptians, and possibly even further. Interesting though that is, these, ancient cookbooks were just very basic hieroglyphic recipes for food preparation.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Later, we have some books which were published in the 1300s ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these are not about the curry that we all know today, but rather descriptions of the types of meals served to the wealthy. For the centuries that followed, the upper-class families of Wesstern Europe strove to serve up the most extravagent banquests, and consequentially chefs and their recipe collections were highly sought after. Nevertheless, it wasn`t until the nineteenth century that formal cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and recording popular recipes of the day. The introduction of the TV brings us TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on this site. |
