The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions way back into antiquity, at least as far as the early Egyptians, and possibly even further than that. Interesting though that is, sadly, these early recipes were just primitive hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to academics is a series of ancient tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Progressing into The time of the romans 25BC a roman called Apicius compiled a collection of scripts which described recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into starters, main meal and desserts, something we still use today. Additionally, he tells us how the ancient cooks used a good variety of aromatic flavors, including many that are still in use today like basil, mint and dill. In the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices such as coriander, basil and rosemary. The introduction of these new culinary ideas was responsible for an eruption in recipe books, most of which still exist in academic collections. Over the next few centuries, the rich and powerful families of Europe tried to serve the best banquets, and as a consequence, chefs and their recipes were at a premium. However, it was during the 19th century that cookery and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, trying out, and recording recipes to allow everyone to enjoy them. The introduction of television brings us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on sites such as this. |
