The History of Recipes
Food historians have traced the existance of recipes far back into history, certainly as far as pharonic Egypt, and quite possibly further than that. Having said that, in the main part, these early recipes were just primitive hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to experts is a series of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Closer to modern times, we have some recipe books which appeared in the 14th Century ; a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these books are unconnected to the spicy food that appears on menues today, but rather recipes for the types of meals cooked for the rich and powerful of that period. In the fifteenth century, knights returning from the crusades brought back many foods and herbs from Arab cuisine, such as parsley and basil. These new culinary innovations caused a torrent in manuscripts on cookery, some of which still exist in private libraries. During the succeeding few centuries, the upper-class families of Wesstern Europe competed with each other to offer the most extravagent meals, and because of this cooks and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and publishing recipes common in their social group. Like it or not, the introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes such as those found on our web site. |
