1 tbsp butter
1 pinch cumin
4 oz chopped green chilies
1 cup canned chopped tomatoes
1/2 cup chopped onion
1/2 lb shredded jack cheese
1 tsp minced garlic
3 oz cream cheese
1/4 tsp pepper
1 tbsp chopped cilantro
Directions
Microwave margarine on high for 30 seconds. Add next 5 ingredients,
cover with plastic wrap (leaving vent) and microwave on high for 2
minutes. Add tomatoes and cook 2 minutes. Add cheese and cook 1
minute. Stir and cook 1 minute. Stir in cilantro. Serve with
tortilla chips. Makes 2-1/2 cups, 35 calories per tablespoon.

The History of Recipes
Written cooking instructions as an idea can be traced way back into history, in truth as far back as the Egyptians, and possibly even further than that. Interesting though that is, mostly, these ancient records were just simple hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to experts are some ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. As we move into The time of the roman empire around 25BC a roman called Apicius compiled a few documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, something we still use today. He also recounts how the Roman chefs made use of many different herbs, including some that we all recognise like thyme, fennel and asafoetida. In the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the Middle-East, such as basil and coriander. These new foods and tastes caused an increase in manuscripts on cooking, most of which still exist in private libraries. Over the following few centuries, the rich and powerful families of Europe tried to offer the best banquets, and as a result cooks and their recipe collections became highly prized. However, it wasn`t until the nineteenth century that formal cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collating, verifying, and writing down recipes to allow everyone to enjoy them. The arrival of TV brings us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing us all to search through massive numbers of recipes like those on the site you are now reading. |
