The History of Recipes
Food historians have traced the existence of recipes far back into distant history, certainly as far back into recorded history as ancient Egypt, and possibly even further. In practice though, mostly, these ancient cook books were just very basic pictorial recipes for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to academics are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius wrote a number of scripts which described recipes cooked by his fellow Romans. In his works, he describes how the meals were split into appetizers, main course and desserts, something that is very familiar to us today. Additionally, he informs us how the Roman chefs used many spices and herbs, including a few you will know such as bay, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back many new spices and herbs from the holy lands, including rosemary and coriander. These new herbs and spices led to a torrent in recipe books, some of which are kept safe in academic collections. For the centuries that followed, the powerful and rich houses tried to offer the most exotic banquets, and consequentially the best cooks and their recipe collections were greatly in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and publishing popular recipes of the day. By the time we get to the 20th century, cook books are starting to become popular mostly due to better eduction, people having more leisure time and having more money. The arrival of television gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on this site. |
