The History of Recipes
Transcribed cooking instructions as an idea can be observed far back into the far past, in truth as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these old recipes were just primitive hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius created a number of documents which described recipes prepared by his fellow Romans. In his works, Apicius recounts how the meals were separated into appetizers, main course and dessert, something that is very familiar to us today. Aspicius also describes how the ancient cooks were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern chefs such as bay, rue and dill. Over the following few centuries, the families of Europe tried to serve the most exotic banquets, and consequentially the best chefs and their recipes became highly prized. Even so, it was during the nineteenth century that formal cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to assembling, verifying, and publishing recipes for their fellow cooks to enjoy. When we get to the 1900s, cookbooks were increasing in popularity mostly due to better eduction, people having increased leisure time and disposable income. |
