The History of Recipes
It is possible to track the history of `recipes` far back into distant history, certainly as far back into recorded history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, these, early recipes were just very simple pictorial instructions for food preparation.
In fact, the oldest recipe discovered, according to food historians is a collection of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius created some scripts detailing recipes prepared by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Additionally, he describes how the ancient Romans were skilled in the use of many herbs, including a few that will be familiar to modern chefs such as bay, rue and parsley. For the decades that followed, the powerful and rich competed to lay on the most exotic banquets, and consequentially the best cooks and their recipes could command a high salary. However, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cookbooks are highly popular mostly due to better eduction, people having increased free time and having more money to spend. |
