The History of Recipes
It is actually possible to trace the history of recipes back into history, in truth as far as the Egyptians, and quite possibly further than that. In practice though, in the main part, these ancient cookbooks were just simple hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to experts is a collection of tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius compiled a few documents which described recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into starters, main course and desserts, a style of dining still practiced today. He also recounts how the ancient Romans were skilled in the use of a wide range of spices and herbs, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. As we move on, there are two interesting cookery books from the fourteenth century - a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, they are not about the spicy food that is popular today, but instead descriptions of the types of food prepared by the chefs of the rich. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. The introduction of these new tastes was responsible for an increase in books on cooking, many of which are kept safe in academic collections. During the next few centuries, the wealthy families of the West tried to lay on the best banquets, and as a consequence, the best chefs and their recipes became highly prized. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and recording recipes common in their social group. By the advent of the 20th century, cooking books were increasing in popularity due to more people being able to read, people having increased spare time and disposable income. The revolution that is television brought us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this site. |
