Directions
HEAT OVEN TO 450 DEG F. MOVE OVEN RACK TO LOWEST POSITION. COMBINE
BAKING MIX AND WATER, BEAT ABOUT 20 STROKES. TURN DOUGH OUT ONTO
SURFACE DUSTED WITH BAKING MIX. KNEAD DOUGH UNTIL NO LONGER STICKY,
ABOUT 60 TIMES. ROLL DOUGH INTO A 12" CIRCLE. PLACE DOUGH ON GREASED
PIZZA PAN. SPREAD CHILI OVER DOUGH. TOP WITH BOTH CHEESES. BAKE 12 TO
15 MINUTES OR UNTIL CHEESE IS MELTED AND BUBBLY.

The History of Recipes
Recipes as a concept can be tracked back into distant history, at least as far back into recorded history as early Egypt, and possibly even further than that. In practice though, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to historians are a few ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Much later, in Roman times a Roman scholar, called Apicius, assembled some scrolls describing recipes prepared by the Romans. He describes how the meals were divided into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient Romans were skilled in the use of many spices, including a few that are still present in modern kitchens for example thyme, fennel and dill. Over the succeeding few hundred years, the wealthy families of Europe competed with each other to offer the most extravagent meals, and consequentially cooks and their recipes were much in demand. Notwithstanding that, it was during the nineteenth century that fine cooking and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collecting, testing, and recording recipes common in their social group. The TV revolution brought us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like the ones you can find on this web site. |
