The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into ancient history, at least as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that is, these, ancient recipes were just simple pictorial recipes for preparing food.
Interestingly, the oldest recipe found, according to academics are a few tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. As we move into The time of the romans 25BC a man called Apicius compiled some documents describing recipes enjoyed by wealthy Romans. In his works, he describes how the roman meals were separated into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. He also tells us how the ancient chefs were skilled in the use of many herbs and spices, including some that we all recognise like thyme, mint and dill. Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from the East, including spices such as basil and coriander. The introduction of these new culinary ideas caused an explosion in recipe manuscripts, some of which still exist in private collections. During the next few hundred years, the wealthy families of Europe competed with each other to serve up the most exotic banquets, and as a result chefs and their recipe collections were much in demand. However, it wasn`t until the 19th century that fine cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and recording recipes to help cooks of their time. Like it or not, the introduction of TV brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on our web site. |
