The History of Recipes
Written recipes as an idea can be found back into history, in fact as far as pharonic Egypt, and maybe even further. In practice though, generally, these old cook books were just simple pictorial instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to food historians is a series of ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Moving our culinary historical trip onwards, there are two books which were published in the 1300s - a book called `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the spicy food that is familiar to us all today, but rather descriptions of the types of meals on the tables of the nobility of that time. Over the next few hundred years, the wealthy families of Wesstern Europe strove to lay on the most extravagent meals, and as a result chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and recording the recipes that were being prepared for the better households. When we get to the 20th century, recipe publications are starting to become popular as a result of increased literacy, leisure time and having more money to spend. |
