2 lb pork, cubed
1/2 cup water
1 tbsp garlic, minced
1/2 cup onions, dry
1 can stewed tomatoes, 14 oz
1 tsp coriander, ground
1/2 cup green chilies, chopped
2 tbsp cilantro, chopped
1 cup salsa fresca
Directions
Cook pork and garlic in 1/2 cup water until all the water is
absorbed. Let the pork brown in it's fat for a few minutes. Add onion
and saute till translucent. Add tomatoes and chilies, cover and
simmer for 30 to 40 minutes. Just before serving, add the chopped
cilantro, salt and pepper to taste, stirring well. Serve with Salsa
Fresca.

The History of Recipes
Experts have tracked the existance of recipes way back into distant history, in truth as far as the Egyptians, and maybe even further. However, sadly, these old cook books were just basic pictorial recipes for preparing food.
Interestingly, the most ancient recipe found, according to historians is a series of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Closer to modern times, there were two interesting cookery books from the 1300s ; one book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these two books are nothing to do with the curry that we all know today, but rather recipes for the types of food on the menus of the rich. During the succeeding few hundred years, the upper-class families of the West tried to lay on the best banquets, and as a result chefs and their recipe collections were greatly in demand. Nevertheless, it was during the 1800s that cooking and cookery books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, testing, and recording recipes for their fellow cooks to enjoy. Like it or not, the introduction of television brings us celebrity chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes just like those on this recipe site. |
