The History of Recipes
Academics have tracked the existance of recipes back into the distant past, in fact as far back into recorded history as pharonic Egypt, and possibly even further than that. Interesting though that maybe, mostly, these ancient recipes were just simple hieroglyphic recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts is a collection of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. During Roman times around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes prepared by the Romans. He recounts how the meals were split into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times made use of many different herbs and spices, including some familiar names for example basil, rue and dill. In the fifteenth century, the Crusaders brought back many new foods and spices from middle-east cuisine, such as coriander, basil and rosemary. The introduction of these new herbs and spices prompted an outbreak in cookery books, the majority of which are kept safe in academic collections. By the arrival of the 1900s, recipe publications were starting to become popular as a result of higher levels of literacy, people having more free time and disposable income. Like it or not, the introduction of television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like those on our web site. |
