The History of Recipes
It is possible to follow the history of written recipes way back into history, certainly as far back into recorded history as ancient Egypt, and maybe even further. In practice though, in the main part, these ancient records were just simple hieroglyphic recipes for meal preparation.
In fact, the oldest recipe found, according to experts is a series of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Later on, there were a couple of recipe books which appeared in the 1300s - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian curry that appears on menues today, but rather descriptions of the types of food enjoyed by the rich. For the centuries that followed, the rich and powerful families of Europe competed to serve the most exotic meals, and as a result chefs and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and publishing recipes to help cooks of their time. By the time we get to the 20th century, cookery publications are highly popular mostly as a result of increased literacy, leisure time and disposable income. |
