2 tbsp butter
2 onions, chopped
2 garlic cloves, sliced
2 tbsp flour
1 can tomatoes (14 oz)
1/4 cup ground ancho or pasilla chile
1 tbsp tarragon vinegar
1 tbsp dried oregano
1 tbsp brown sugar, packed
Directions
Melt butter in skillet. Brown onions and garlic. Stir in flour and add
tomatoes, ground chile, vinegar, oregano and brown sugar. Simmer 15
minutes.

The History of Recipes
Academics have tracked the existence of recipes way back into distant history, certainly as far back into history as the early Egyptians, and maybe even further. Interesting though that is, these, early cook books were just primitive hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to food historians is a series of ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Progressing into The time of the romans 25BC a roman called Apicius assembled a number of documents detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and afters, something we still use today. Aspicius also recounts how the Roman cooks made use of a good variety of aromatic flavors, including some familiar names for example basil, rue and asafoetida. Over the next few centuries, the upper-class families of the West competed to serve the best banquets, and as a result chefs and their recipes could command a high salary. However, it wasn`t until the 1800s that formal cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and writing down the recipes of their peers. The introduction of television brings us TV cooks and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through thousands of recipes such as those found on sites such as this. |
