2 tbsp butter
1 medium onion, diced
1 english cucumber, diced
3 cup chicken broth
2 cup plain yogurt
1 salt & pepper to taste
1/4 cup fresh mint, chopped
Directions
Saut, onion until golden. Stir in cucumber and cook 2 minutes. Add
chicken broth and cook covered for 15 minutes. Cool slightly and
pur,e in a blender. Chill. Stir in yogurt, mint, and salt & pepper.

The History of Recipes
It is quite feasible to follow the history of recipes far back into distant history, in fact as far back into history as the Egyptians, and potentially, even further back. Interesting though that is, generally, these ancient cookbooks were just primitive hieroglyphic instructions for preparing meals.
Interestingly, the most ancient recipe found, according to experts are a few stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Progressing into The time of the romans around 25BC a roman called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, he recounts how the roman meals were split into appetizers, main meal and afters, something that is very familiar to us today. He also describes how the ancient cooks made use of a wide range of spices, including some familiar names for example thyme, rue and parsley. Moving on, we find some books from the fourteenth century - a recipe book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these two books have no connection with the curry that appears on menues today, but instead recipes for the types of meals prepared by the chefs of the nobility of the time. Later, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from the East, including spices like coriander, parsley, and basil. The introduction of these new culinary ideas led to an explosion in manuscripts on cooking, some of which are now in private collections. By the time we get to the twentieth century, cookbooks are greatly in demand due to increased literacy, people having increased spare time and disposable income. |
