1 1/2 pt vegetable stock
1/2 pt dry cider
2 oz short-grain brown rice
1 salt & pepper
2 each lemons, juiced, rind grated
2 tbsp chives, snipped
4 each thin lemon slices to garnish
Directions
Simmer the stock, coder & rice in a covered pot with salt, pepper &
lemon rind for 40 minutes. Puree & return to the pot.
Mix in the lemon juice & simmer gently. Cool & skim any fat that
might appear on the surface. Chill.
To serve, scatter with the chives & garnish each bowl with a slice of
lemon.

The History of Recipes
Written recipes as an idea can be observed way back into the distant past, certainly as far as ancient Egypt, and maybe further still. In practice though, in the main part, these old cook books were just basic hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Much later, in Roman times a man called Apicius assembled a few documents detailing recipes prepared by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, something we still use today. This early Roman chef recounts how the chefs of Roman times used a wide range of aromatic flavours, including a few that are still present in modern kitchens like thyme, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back a variety of spices and herbs from middle-east cuisine, including parsley, basil and rosemary. The introduction of these new tastes led to a torrent in publications on food, the majority of which are now in private cookery archives. The introduction of the TV gave us cooking programs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through thousands of recipes like the ones you can find on this recipe site. |
