The History of Recipes
Experts have proved the existence of recipes way back into ancient history, certainly as far as early Egypt, and maybe further still. In practice though, in the main part, these early cookbooks were just very simple hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe found, according to food historians are a few clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As we move into The time of the roman empire 25BC a man called Apicius compiled some scripts detailing recipes prepared by wealthy roman citizens. He describes how the meals of wealthy Romans were split into appetizers, main course and afters, something we still use today. He also informs us how the early Romans made use of a wide range of herbs, including a few that will be familiar to modern cooks such as thyme, rue and dill. As our culinary historical trip moves on a few more years we have a couple of cookery books which appeared in the 14th Century : a cookery book published under the title `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these two books are not about the curry that is familiar to us all today, but instead descriptions of the types of meals enjoyed by the rich and powerful of that time. In the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from the East, including parsley, basil and rosemary. The introduction of these new tastes created an increase in manuscripts on cooking, most of which are kept safe in academic collections. The introduction of television brought us TV cooks and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on the site you are now reading. |
