The History of Recipes
Recipes as an idea can be traced back into the far past, certainly as far as pharonic Egypt, and potentially, even further back. However, sadly, these old cook books were just very basic hieroglyphic or cunieform instructions for preparing meals.
During the time of the Romans a man called Apicius created a number of documents detailing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main course and desserts, something that is very familiar to us today. Aspicius also describes how the cooks of his times made use of a wide range of aromatic flavors, including some familiar names for example bay, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from middle-east cuisine, including spices like coriander, parsley, and rosemary. These new herbs and spices led to an increase in books on cookery, some of which are kept safe in private libraries. When we get to the 20th century, cooking publications are highly popular as a result of higher levels of literacy, people having increased leisure time and being a little richer. |
