The History of Recipes
It is quite possible to track the history of written cooking instructions back into ancient history, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, generally, these old recipes were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius created some documents showing how to cook the recipes prepared by his fellow Romans. In his publication, he describes how the meals were separated into hors d`oeuvres, main meal and afters, something that is very familiar to us today. He also describes how the ancient Romans were skilled in the use of many different spices and herbs, including a few that will be familiar to modern chefs like thyme, fennel and parsley. During the next few hundred years, the rich families of the West strove to serve the most extravagent banquests, and consequentially chefs and their collection of recipes were highly sought after. Even so, it wasn`t until the 19th century that formal cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes to help cooks of their time. By the time we get to the twentieth century, cooking publications were starting to become popular as a result of better eduction, increased leisure time and being a little richer. Like it or not, the introduction of TV brings us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on this site. |
