The History of Recipes
We can trace the history of `recipes` back into history, at least as far back as ancient Egypt, and possibly even further than that. Interesting though that is, generally, these ancient records were just simple hieroglyphic or cunieform instructions for preparing meals.
In fact, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of ancient tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into Roman times around 25BC a man called Apicius compiled a few documents detailing recipes enjoyed by his fellow Romans. In his works, he recounts how the roman meals were split into starters, main course and dessert, something that is very familiar to us today. Aspicius also describes how the ancient Romans were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens such as basil, fennel and dill. For the next few years, the wealthy families of the West competed to serve up the most exotic meals, and because of this cooks and their collection of recipes were highly sought after. However, it was during the nineteenth century that fine cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, verifying, and recording popular recipes of the day. The introduction of the TV brought us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on our web site. |
