The History of Recipes
Recipes as an idea can be tracked way back into antiquity, in truth as far back into recorded history as the Egyptians, and potentially, even further back. However, sadly, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
Progressing into Roman times 25BC a roman called Apicius compiled a few documents which described recipes prepared by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvres, main meal and dessert, a very modern way of dining. He also tells us how the ancient Romans used a good variety of aromatic flavors, including some that we all recognise such as thyme, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the East, including spices like coriander, parsley, and basil. These new herbs and spices caused an explosion in recipe manuscripts, most of which still exist in private collections. When we get to the 20th century, cookery publications are increasing in popularity due to increased literacy, people having increased spare time and being a little richer. |
